    After harvest, olives can ferment or develop defects if they remain warm or compressed for too long. Milling promptly reduces that risk, but it means the mill, equipment, transport, and production team must be ready when the fruit is ready.

    That tighter schedule can cost more than holding fruit or processing around a high-volume timetable. It also supports quality only when sanitation, temperature, malaxation, and storage are controlled through the rest of production.
